Founded in 1905 in Minnesota, NCCO began as a commercial printer producing food and housing vouchers. Its GuestCheck order pad soon became standard in restaurants nationwide, anchoring the company in the foodservice sector. Over time, NCCO added register rolls, food-safety labels, and cloud-based tools that help kitchens track temperatures, manage tasks, and meet compliance requirements.

Today the company operates across more than 20 business units with 40 databases, each supporting a different product or acquired business line. That diversification brought growth—but also complexity.

The challenge: Too many systems, too little time

As NCCO expanded, every new business introduced another silo. Core ERP platforms like Epicor and Syspro ran on-prem, while cloud systems such as Salesforce and payment tools handled customer operations. Reporting required constant exports and manual reconciliation, leaving executives without a single view of company performance.

With only two data engineers, maintaining dozens of brittle ETL jobs wasn’t sustainable. The team evaluated open-source and SaaS ETL options, but most failed key requirements: predictable cost, on-prem deployment, and enterprise-grade support.


The solution: Self-managed CDC pipelines in CData Sync

NCCO adopted CData Sync to replicate its ERP, SQL, and Salesforce data into Snowflake, running the platform entirely inside its own network perimeter. That self-managed setup gave the team complete control of credentials and access while automating near real-time data movement between systems.

Change Data Capture now keeps nearly all tables current (about 600–700 million rows per month) without straining source databases. For older SQL and ERP systems that don’t support CDC, the team uses incremental replication to achieve similar efficiency. Centralized monitoring ensures every job completes reliably, even as the environment continues to grow.

NCCO plans to continue scaling its data backbone well beyond the 500 tables already feeding Snowflake. The goal is to bring every remaining system online (ultimately more than 1,000 tables) to give all business units a consistent, connected model for analytics.

As that foundation grows, the team is exploring new ways to put data to work: offering customers real-time visibility into their orders and shipments, using unified data to reinforce brand standards across franchise locations, and evaluating scenarios where standardized information could flow back into operational systems through reverse ETL.
